Broccoli Quiche.

Broccoli Quiche.

This is a crustless recipe, but of course you can add crust to it. You can just roll out the dough onto a pie dish, poke holes on it with a fork, and bake it alone for 10 min at 400 degree F before you pour the egg batter.

Ingredients:

2 Tablespoons butter

1/2 cup chopped shallots

10oz. broccoli, cut into 1-inch pieces or smaller

1 teaspoon salt

6 large eggs

1-3/4 cups heavy cream

pinch ground nutmeg

1-1/2 cups (5 oz.) shredded cheese (such as Gruyere, Swiss, or even Cheddar)

Directions:

1. Preheat the one to 325 degree F. 

2. Melt the butter in a large sauce an over medium-low heat. Add the shallots and cook, stirring occasionally, until soft and translucent, about 4 minutes. Do not brown. 



3. Add the  broccoli, 1/4 teaspoon of the salt, and 1/3 cup or less water. 



4. Put a lid on. Increase the heat to medium and steam the broccoli until the water has evaporated. Be careful not to overcook the broccoli.




5. In a large bowl, whisk the eggs with the cream, nutmeg, and remaining 3/4 tsp. salt.



6. Spread the broccoli and shallots evenly over the bottom of the prepared pie dish.

 7. Sprinkle the cheese over top. 


8. Pour the egg mixture over the cheese.


9. Bake for about an hour, or until the custard is set and top is golden brown. let cool for about 10 minutes.
