What a silly name for a dish! It is so silly and unique that Lena used to ask me to test if I am her real mom, just in case an evil woman may have disguised herself as me… “What is the name of a pasta dish with bacon, garlic, and Italian herbs?” “Passerpateou.” Phew! “OK, you’re my real mom.”

Sometimes a simple dish like this can be something you absolutely crave for. Enjoy making it!

Ingredients:



Thin spaghetti

1lb. Bacon, cut in 1/2inch thick


1 tablespoon olive oil

3 cloves of garlic, minced

1/2 teaspoon dried Basil 

1/2 teaspoon dried Oregano 

Directions:

1. Boil water in a large pot. Add enough salt to taste, like sea water

2. Heat a large pan and cook bacon until crispy. Take the bacon out onto paper towel. Set it aside. 

           

3. Discard 2/3 of the bacon grease. Add olive oil to the pan. Cook garlic and the dried herbs over low heat. You can add dried red pepper, if you like. 

4. When the spaghetti is done, drain the pasta and save some of the pasta water. (Bacon grease, olive oil, garlic and herbs mixed with some of the pasta water will make the sauce for the pasta.)

5. Place the pasta in the large pan of bacon grease and garlic. Over medium heat, toss the noodle and add some of the pasta water. Add bacon. Taste with salt and pepper. Delish!
